Ingridients:

  • 1 small squid
  • 1 onion
  • Garlic and Parsley (finely chopped)
  • Black pepper
  • Olive oil
  • 2 x tins of chickpeas
  • Frozen, peeled, raw prawns (12?)
  • Aubergine
  • Peppers
  • Fish stock

Chickpeas with Prawns & Squid

In a pan, put a drizzle of olive oil, some grated white onion, some chopped peppers (different colors make it look nice), some finely chopped aubergine, garlic, and parsley.

Then, add the cleaned and cut squid and cook until all golden and when the onion and aubergine have nearly melted.

While all this is happening, cut a couple of small potatoes in chunky bits, and add to the cooking pan.

Prepare a fish broth (or you can use a fine stock) and get it hot.

Prepare and rinse one or two tins of good chickpeas.

Now, in a pan, mix it all, add some frozen raw, peeled prawns; cook all for like ten minutes, making sure it is juicy but not too watery (not like a soup!). Correct salt and pepper if necessary.
