Red Chard & Cauliflower Soup
This is a very healthy vegetarian earthy recipe.
In a big pan heat 2 x tablespoons of olive oil and a knob of butter. Add the chopped onion and 2x cloves of peeled spring garlic and cook until translucid. Add 2 chopped (and peeled) carrots and keep cooking…
Then add the small cauliflower in florets and the chopped potato. Steer and cook a little longer. Add spices
Add the broth until properly covered. Then add the clean red chard. Make sure all is just covered by the liquid.
Add a handful of peas and a small glass of milk
Cook for 15 mins / Let it rest / Blend long enough until silky
Serve with a side of optional homemade croutons*
*(to make the croutons, cut dry-ish bred into small cubes, place on an empty frying pan, add a sprinkle of virgin olive oil and/or a knob of butter -just enough to lightly coat them- and keep stirring until golden and fluffy. You can add an unpeeled clove of purple garlic to infuse some flavour)
