Tomato Passata

When doing a tomato sauce:

Set a frying pan with extra virgin olive oil

Add some grated onion and an unpeeled clove of garlic + black pepper + a piece of red pepper and a piece of chorizo (optional for non vegetarians)

Optional, add some chopped garlic and parsley

On the side, take a tin of tomato (any) and put it on a jug, add leaves of basil, salt, sugar and a drop of soya sauce

Blend it

Add to frying pan when onion is brownish (not burnt)

Slowly cook till thickens
